Őriszentpéter, Hungary
Pajta, the restaurant, came first, earning accolades (including a MICHELIN Star) for high-end dishes crafted from Őrség produce and for its modern-meets-rustic architecture and design. Both are also on display in the seven cabins that make up Kástu, the overnight component of the Pajta experience.

Hotel El Roblar

After originally opening in 1919, Ojai’s longest-standing hotel, El Roblar, has been restored to its former glory and reopened as a 50-room boutique bolthole. The restoration has thankfully retained the property’s Spanish Revival architecture, including the Mission-style entry archway and the lobby’s stone fireplace.

Pocketbook Hotel & Baths
Hudson, NY, USA
First a textile mill, later a pocketbook factory, this red brick industrial structure has occupied a large plot of land in Hudson since the 1890s. As of 2025, however, it’s been reborn as Pocketbook Hudson, a project that’s a bit more ambitious than the restored motor lodges and farmstead hotels typical of the region.

Sitting in the heart of Speyside, Scotland’s picturesque whisky county, Dowans is neighbors with more than 50 whisky distilleries, some of which are in walking distance from the hotel. Although you might not even need to leave try them; the hotel’s bar stocks around 750 whisky references.
