Francesco’s restaurant, run by the Mariani family for six generations, began as a humble wine shop serving the workers of Rome’s slaughterhouse. These workers brought with them the offal they were paid with, inspiring the family’s great-great-grandmother to create one of Rome’s most iconic dishes: coda alla vaccinara (braised oxtail). Nestled in caves beneath Monte Testaccio, the restaurant remains a testament to Roman culinary tradition.

La Palma de Bellafila

The passionate duo behind La Palma de Bellafila is on a mission: to preserve the Gothic Quarter’s culinary authenticity. Albert, a trained sommelier, and Judit, a Barcelona local, opened La Palma de Bellafila this July after taking over Bodega La Palma in 2005. Their new restaurant blends refined, traditional Catalan cuisine crafted from locally sourced ingredients under the guidance of a Michelin-starred chef. Bakery

Going strong since 1932, Poilâne is a storied bakery that takes pride in staying true to their traditions. The owner, Apollonia Poilâne, is a third-generation artisan baker who is passionate about continuing her family’s legacy. When you join us on tour, you’ll meet friendly vendors like Beatrice, who share all about the bakery’s special sourdough – a loaf made with stone-milled flour, water, natural yeasts, and sea salt from Brittany.

If you’ve joined our Ultimate Pintxos & Wine Tour, you’ve likely met Sylvain! On this tour, we visit Zapore Jai, a family-run store stocked with Basque and Spanish gourmet goodies. Sylvain and his wife Aurkene have worked in the gourmet food industry for decades and love sharing these fascinating products with the world.

Gema moved from Huelva to sell excellent jamón ibérico products at Corta y Cata, her stall in Mercado de la Encarnación. Her clients range from local shoppers to curious international visitors seeking an authentic ham experience. When we asked Gema what she liked most about living in Seville, she said:
“The wonderful people! Apart from this, it’s a beautiful city with amazing monuments – but I always say that it’s the people that make the places!”
